The West Cornwall Pasty Co. was established in 1998 and by the beginning of 2000 had expanded to four shops. Nick Downing was first retained by the company at the end of 1999, and acquired eighteen units within the next four years on the companies behalf with seven more in 2004, eight in 2005, and ten units acquired in 2006.
